dc.description.abstractTape recorded interview of Mercedes Kainski conducted by Gayle Martinson on February 12, 1986 in Menomonie, Wisconsin. Dr. Kainski was born in 1923. She attended Algoma High School before enrolling at the University of Wisconsin. While at Madison, Kainski received a B.S. in Home Economics in 1944, an M.S. in Food and Nutrition in 1955, and a Ph.D. in Foods in 1957. Before joining the facutly at Stout in 1967, she taught at several high schools as well as Bowling State University and Kansas State University. As a staff member of the School of Home Economics, her concentration was in the area of Food and Nutrition. Dr. Kainski retired in 1985. One year later, she received professor emeritus status from the Board of Regents.en_US
