The Center for Dairy Research has grown substantially since its formation in 1986. It has administrative oversight of 34 research projects or programs funded by the Wisconsin Milk Marketing Board, National Dairy Promotion and Research Board, State of Wisconsin, University of Wisconsin, and private industry. Research areas encompass (l) Safety and quality of milk products (2) Cheese research, (3) Milk components and their uses. In the latter, milkfat modification and utilization receives greatest emphasis. The original concept of fostering multi-disciplinary research is being realized with projects underway in six academic departments including production, processing, and economics of milk and milk products.&#13;
&#13;
As we strive, step by step, to be a high caliber research center, we are frequently reminded of our dependence on feedback from the dairy producers and dairy foods processors which help us design effective applied and basic research projects. As we see it, to succeed in our goal of increasing the utilization of milk and milk products, the food industry and researchers must team up to produce products of appeal to the evermore demanding consumer. A prosperous dairy economy will depend upon the dialogue between researchers, marketers, and business people involved in this industry.&#13;
&#13;
A unique and rapidly evolving project within the Center is the Worldwide Information and Technology Exchange Program. Designed to bring&#13;
together dairy research efforts and information, WITEP coordinates an annual conference, a seminar series, special conferences and workshops, a&#13;
scientist exchange program, and the preparation of various published materials.&#13;
&#13;
We hope you find this report informative and a source of enthusiasm. We invite all segments of the dairy research effort - marketing and promotion boards, universities, individual researchers, and private industry - to help us move forward and join us in building the resources of scientific skills, communication networks, and innovative ideas in dairy research. This unified effort, I believe, is critical for the solid and dynamic growth of dairy research.

The research and information/technology transfer activities of the Center for Dairy Research (CDR),which were initiated in 1986,were designed as multi-disciplinary programs to address specific needs in four focus areas: milk component utilization, cheese technology, food safety, and process and product development. It is impossible to trace or verify the use of all the CDR research outputs, but some examples of CDR research that have been adopted or evaluated by the dairy industry are:&#13;
&#13;
1. techniques developed in cooperation with Land a Lakes to minimize calcium lactate crystallization on cheese,&#13;
&#13;
2.development of Wisconsin Style Havarti? cheese, which is being manufactured and marketed commercially,&#13;
&#13;
3.development of whey fermentation techniques to produce two unique polysaccharides (gums) that have potential food and non-food uses,&#13;
&#13;
4. development of lactic add bacterial strains that produce only L-Iacticadd, a key ingredient in the emerging biodegradable plastics industry,&#13;
&#13;
5. building a basis for industrial quality-control practices by determining the effects of environmental factors on survival of Listeria monocytogenes in milkclotting enzyme preparations,&#13;
&#13;
6. developing technologies being utilized by cheese manufacturers and culture supply houses for manufacturing lowfat cheeses and determining the factors that effect flavor quality of lowfat and low-sodium cheeses,&#13;
&#13;
7.computer programs that have been or are being used by the cheese industry to evaluate economics of milk standardization and cheese manufacturing.&#13;
The research program summarized in this report describes the continuation of our efforts in our four focus areas. &#13;
&#13;
Accomplishments in each of the areas are summarized preceding the project reports. The activities of CDR's Worldwide Information and Technology Exchange Program (WITEP) illustrates our commitment to communicating the information/ technology generated by the research program to the dairy industry.&#13;
&#13;
The research and the information/technology transfer functions outlined in this report result from financial and technical support from the Wisconsin Milk Marketing Board and the National Dairy Promotion and Research Board, input from industry advisors, careful planning by CDR committees and researchers, and, most importantly, the creativity and dedication&#13;
of the researchers and the WITEP and administrative staff. We invite your comments and suggestions to further improve our programs.

As you will see from this report, in the past year the Center for Dairy Research attained several substantial goals in both our research program and our information and technology transfer activities. Our desire for interdisciplinary research has become a reality with cooperative and complementary projects between scientists within departments, across departmental and college boundaries, and with other U.S. universities and international research organizations.&#13;
&#13;
The research reports herein reflect the efforts of researchers in the Center for Dairy Research, Walter V. Price Cheese Research Institute, and the Departments of Food Science, Food Microbiology and Toxicology, Chemical Engineering, Dairy Science, Nutritional Sciences, Agricultural Economics, and Meat and Animal Science, and of researchers at Purdue University, and the University of Nebraska, plus visiting scientists at CDR.&#13;
&#13;
Milk component utilization, cheese technology, product and process development, and dairy food safety and quality continue to be areas of emphasis in the Center. Milkfat research encompasses control of milk composition, the fractionation and modification of milkfat, basic research to facilitate use of milkfat as a food ingredient, plus demand analysis to project milkfat usage in the future. &#13;
&#13;
Fractionation procedures, unique methods of milkfat modification by interesterification, and characterization of milkfat fractions show promise for enhancing milkfat utilization. Research on whey is more limited in scope, but studies on production of polysaccharides from lactose and isolation of minor whey proteins have prompted interest by industry. Major thrusts of our cheese research program include expanding the market for cheese and improving the flavor and quality of cheese. Basic research to improve the characteristics of low-fat and low-sodium cheeses continues our efforts to increase the range of high-quality cheeses available to the consumer. A multi-project program on enhancing and controlling cheese flavor includes research on characterization of enzymes of potential flavor-producing bacteria, technologies such as spray-drying to provide functional cultures to industry, and evaluation of these cultures in cheese.&#13;
&#13;
The Centers program includes an emphasis on maintaining the safety of dairy products. Projects underway investigate methods for the detection of pathogens in dairy products and the effects of environmental conditions on survival of those pathogens. Methods for detecting only virulent strains of Listeria monocytogenes and a rapid assay for a pathogenic Escherichia coli strain are being developed. Impacts of processing technologies on pathogen survival should be directly applicable to the cheese industry. Subpasteurization heat treatments greatly reduced the survival of several pathogens in Cheddar cheese, and the curd-cooking process had similar effects in Pannesan cheese.&#13;
&#13;
The Worldwide Information and Technology Exchange Program is a catalyst to our research program and a conduit for information and technology transfer. Our scientist exchange program has contributed directly to research output but, equally as important, has facilitated longer-tenn collaboration with domestic and international laboratories. A mentor program was established to provide input to CDR from experienced dairy researchers. It will be expanded because of its positive impact on our overall research program and on individual researchers.&#13;
&#13;
Dairy technology is always evolving which presents challenges and opportunities that CDR is addressing. Our success results from the combined and cooperative efforts of the researchers, the CDR Administrative Program, and WlTEP.
